Lemon Bars

Crust:
1 cup soft butter
dash of salt
1/2 cup powdered sugar
2 cups flour
Combine all ingredients and mix well. Press mixture into 9 x 13 pan. Bake at 350 for 15 min or until slightly browned.

Filling:
4 beaten eggs
2 cups sugar
1/2 tsp grated lemon rind
1/4 cup flour
6 tbsp lemon juice

Combine four and sugar. Mix in beaten eggs and lemon juice. Pour onto slightly cooled crust. Bake 350 for 25 min or until set. Cool and sprinkle with powdered sugar. Cut into bars. Enjoy!

Mud Pie

36 Oreos
1 cube butter melted
1/2 gallon any flavor ice cream
1 jar hot fudge or caramel topping
1 8 oz container cool whip, defrosted

Crush Oreos in a gallon size zip-lock bag. Mix butter and Oreos. Press 1/2 + of mixture into a 9 X 13 pan. Freeze for 20 min. Cut ice cream to fit on top of frozen crust. (About an inch thick.) Freeze 20 min. Pour Topping over ice cream. Freeze 20 min. Top with cool whip and remaining crumb mixture. Freeze until ready to serve. Cut into squares to serve. For fun with kids you can add gummy worms. :)

Strawberry Jell-O Salad

1 sm. box strawberry jell-o
1 sm. box cook n serve vanilla pudding
1 sm. box cook n serve tapioca pudding

Mix with 2 2/3 cups water, bring to boil, stirring, boil for 1 minute.
Pour into container, let cool room temp 1-2 hours, then refridgerate overnight. (I have done it in the morning, and just let it cool in the fridge all day).

Before serving, stir in

1 8 oz. cool whip
1 pint strawberries

You can mix it up too: orange jello with mandarin oranges, raspberry jello with frozen raspberries, and even double the recipe and mix jellos.
